Tuesdays are the day I weigh in at my local Weight Watcher's meeting. I was worried this week since the last week and half I was on a Canoe Journey. Though I wasn't pigging out, I definitely was not counting my points while camping. Thankfully, at weigh in on Tuesday morning I had lost 3.4 pounds in two weeks. I was very happy indeed. So now I have lost a total of 11.6 lbs since June 12 when I began this weight loss journey. (Enough pounds lost this week to get my clapper - a plastic hand … [Read more...]
Vegetarian Crockpot Recipes
We are stuck in a rut, food wise. And this is exactly why I love Pinterest. I can find Pins and pin great recipes to my boards so easily. It is one fun way to stay organized but in an attractive way. {If you need an invite let me know and I can send one to you.} This week, as I planned our usual 5 meals, I got an idea to utilize my crock pot more often. Traveling on the road makes life difficult, and since I cannot pack my crock pot in a suitcase, these vegetarian crockpot recipes will have … [Read more...]

We did not go grocery shopping on Sunday like we normally would do. We need to eat the items we have left and if we run out of meals, we will eat out. … [Read more...]
Vegetarian Tacos
We love vegetarian tacos. Really, it is one of our favorite meals. Since we don’t eat hamburger we use a vegetable source – TVP. Or textured vegetable protein. This product is made from reduced fat soy beans and is gluten free. The ingredient list only has one ingredient: defatted soy flour. It has 12 grams of protein per 1/4 cup and only 80 calories! We soak equal amounts of TVP and boiling water and let it sit for about 15 minutes. I then add Simply Organic Taco seasonings to the “meat”. … [Read more...]

It is the season for Swiss Chard. Our local farmers in our county are providing us with great big organic chard, with a beautiful flavor, and full firm green leaves. Have you had the chance to eat some local organic produce this summer? If not, I encourage you to head to your local Farmer's Market and stock up on fresh seasonal produce. It is so worth it. We are most likely having company tomorrow and we have some "weird" stuff left in our pantry, fridge and freezer right now. Since, we are leaving on Wednesday for Atlanta for a long weekend we decided not to do our regular shopping today. While I was looking in the pantry I found a box Orzo. Orzo is a rice shaped pasta and very easy to cook up when company is coming. Don't you just love the internet? I can just search "vegetarian orzo recipes" and get so many different recipes right at my … [Read more...]
