We are stuck in a rut, food wise. And this is exactly why I love Pinterest. I can find Pins and pin great recipes to my boards so easily. It is one fun way to stay organized but in an attractive way. {If you need an invite let me know and I can send one to you.}

This week, as I planned our usual 5 meals, I got an idea to utilize my crock pot more often. Traveling on the road makes life difficult, and since I cannot pack my crock pot in a suitcase, these vegetarian crockpot recipes will have to be tested at home, and when we drive to our locations.

    Vegetarian baked beans! A couple weeks ago I had some leftover beans from making chili, so I decided to throw together what I thought would be good in baked beans and make up my own recipe. It turned out sooo yummy! I didn’t measure anything, though, so it’s kind-of a dump-it-in-till-it-looks-right recipe, haha! The other thing I do with my crockpot a lot is just cook dry beans (or rice) for other dishes. It’s nice not to have to watch over it while they’re cooking. ๐Ÿ™‚

      Shannon, my husband loves baked beans. I will have to try it. I will have to Google a recipe though. I am not naturally domestically inclined ๐Ÿ™‚

    Hey Longwaitforisabella,
    Along the same lines,, Here is a great healthy recipe that not many people have tried – Fried Yucca!

    Yucca contains a high amount of vitamin C and carbohydrates. It is also a good source of dietary fiber and contains approximately 120 calories per 1 cup serving.

    1 pound fresh yucca (cassava), cut into 3-inch sections and peeled

    In a pot combine the yucca with enough cold water to cover it by 1 inch. Boil then slowly simmer the yucca for 20 to 30 minutes, or until it is tender.
    Preheat oven to 350? F.
    Transfer the yucca with a slotted spoon to a cutting board, let it cool, and cut it lengthwise into 3/4-inch-wide wedges, discarding the thin woody core.
    Spray cookie sheet with the nonstick cooking oil spray. Spread yucca wedges on cookie sheet. Cover with foil and bake for 8 minutes. Uncover and return to oven to bake for 7 minutes.

    Season with butter and salt alone is fine.
