We are most likely having company tomorrow and we have some “weird” stuff left in our pantry, fridge and freezer right now. Since, we are leaving on Wednesday for Atlanta for a long weekend we decided not to do our regular shopping today. While I was looking in the pantry I found a box Orzo. Orzo is a rice shaped pasta and very easy to cook up when company is coming.
Don’t you just love the internet? I can just search “vegetarian orzo recipes” and get so many different recipes right at my fingertips. Here is what I found

Based on the first recipe, I scrounged around for some ingredients. (I actually do have a carton of vegan Portabella mushroom soup.) With that, the orzo, a can of “mock” duck (fried wheat gluten), cheese, and frozen broccoli, I think that I can make some sort of cassserole. Served with salad and roll, I think they will be happy.
