We love vegetable curry at our house. It is fast, easy and tasty. I use any vegetables I have in my refrigerator. And my Princess loves it!    Edamame are green soybeans in the pod that are picked before they ripen. Preparing edamame is so easy too. We buy it ours frozen at the local grocery store. You can easily find it organic, which are happy for; soybeans truly are best when bought organic. They even sell them dry roasted to eat as a snack.
