Basic Italian Polenta Recipe

March 18, 2011 By LaVonne

Italian Polenta Recipe

I have not had Polenta before. I recently saw it being cooked on TV and it really sounded good. So when I saw a bag for just over $2 at the local grocery store, I couldn’t resist. I had to try it. It is simply ground corn. The only ingredient is corn! I used the following recipe (in half) and made 4 servings. Each serving is 130 calories (without butter). Basic Italian Polenta Recipe (from the back of the Bob’s Red Mill bag) Ingredients 3 cups of water 1 tsp. salt 1 cup of … [Read more...]

Bunny Gingerbread Cookies

March 12, 2011 By LaVonne

When we found out we would be doing a seminar in Northern California with a church we had worked with almost 10 years before, we were excited. We knew a lot of the church members and considered them friends. So this past month, despite the bad weather and no internet access, we have truly been blessed. We have been invited for lunch, dinner, and play dates. Our schedule is full and we feel very loved. This week, as a small thank you for one of our friends who loves bunny rabbits, we … [Read more...]

Fun Sandwich Idea: Heart Shaped PB&J

We are loving our Wilton Heart Shaped Cookie Cutter. And we have not even made cookies yet. We have been using it for toast, pancakes and peanut butter and jam sandwiches. (Remember, I made that organic strawberry jam?) I love the rubber handle because even my toddler can push down on it safely and make heart shapes. Isn't this a fun sandwich idea? There is something about having a heart shaped sandwich that make eating the whole thing easier. Do you use cookie cutters for things other … [Read more...]

10 Super Foods

February 26, 2011 By LaVonne

In a recent issue of one of my favorite magazines I read about 30 healthiest foods to eat. I wanted to share a list of 10 Super Foods that we eat regularly and love. I have even included some toddler tested recipes that we use. I hope you are eating these foods too! 10 Super Foods 1. Whole Grain Pasta: fiber is important to any healthy diet and the whole grain versions of pasta contain 3x as much fiber. (Don’t make the same mistake I did and think that multigrain is the same thing, it is … [Read more...]

Starter Juice Recipes

February 1, 2011 By LaVonne

We have been juicing vegetables and fruits now for over a week. We love it. Even my Princess enjoys her fresh juice. She asks for juice with the "baby leaves" (baby spinach). She even helps make the juice, which is fine by me. I like to start her young on healthy eating with great juice recipes. A small glass of fresh juice at breakfast is so wonderful. And the health benefits? Priceless. Some days we do not get the recommended amount of fruits and vegetables. Juicing helps us get the … [Read more...]

Make Your Own Beans

January 26, 2011 By LaVonne

We love black beans. We buy organic black beans in the can pretty often for about $1 a can. This week we decided to buy the beans dried at our local grocery store. One small bag was under $2 and makes about 3 cans worth. This is a much better deal, people! Make  your own beans! BENEFIT: We put the ingredients we want in them, we don’t have to worry about BPA lining in the cans, and we can even freeze the leftovers. 5 Easy Steps to Crockpot Beans: Rinse and sort beans. Take out any … [Read more...]

Juicing Spinach: Spinach Juice Recipe

Juicing Spinach: Spinach Juice Recipe

Who would like fresh juice with spinach in it? Anyone? Well, my Princess is into it! She loves fresh juice with spinach thrown in. Not only that but she really loves helping make the juice each morning. My daughter is such a good helper! (Can't you just hear The Wonder Pets singing about teamwork right now? No just me? Ok, then.) We resurrected the ole Juice Man Jr. from the cupboard we never open (you know the one right?). This week we have been making fresh juice. Spinach Juice Cocktail 1 … [Read more...]
