I have not had Polenta before. I recently saw it being cooked on TV and it really sounded good. So when I saw a bag for just over $2 at the local grocery store, I couldn’t resist. I had to try it. It is simply ground corn. The only ingredient is corn! I used the following recipe (in half) and made 4 servings. Each serving is 130 calories (without butter). Bunny Gingerbread Cookies
When we found out we would be doing a seminar in Northern California with a church we had worked with almost 10 years before, we were excited. We knew a lot of the church members and considered them friends. So this past month, despite the bad weather and no internet access, we have truly been blessed. We have been invited for lunch, dinner, and play dates. Our schedule is full and we feel very loved. This week, as a small thank you for one of our friends who loves bunny rabbits, we … [Read more...]

Starter Juice Recipes
We have been juicing vegetables and fruits now for over a week. We love it. Even my Princess enjoys her fresh juice. She asks for juice with the "baby leaves" (baby spinach). And the health benefits? Priceless. Some days we do not get the recommended amount of fruits and vegetables. Juicing helps us get the … [Read more...]
Make Your Own Beans
We love black beans. We buy organic black beans in the can pretty often for about $1 a can. This week we decided to buy the beans dried at our local grocery store. One small bag was under $2 and makes about 3 cans worth. This is a much better deal, people! Make your own beans! BENEFIT: We put the ingredients we want in them, we don’t have to worry about BPA lining in the cans, and we can even freeze the leftovers. 5 Easy Steps to Crockpot Beans: Rinse and sort beans. Juicing Spinach: Spinach Juice Recipe
Who would like fresh juice with spinach in it? Anyone? Well, my Princess is into it! She loves fresh juice with spinach thrown in. Not only that but she really loves helping make the juice each morning. My daughter is such a good helper! (Can't you just hear The Wonder Pets singing about teamwork right now? No just me? Ok, then.) We resurrected the ole Juice Man Jr. from the cupboard we never open (you know the one right?). This week we have been making fresh juice. Spinach Juice Cocktail 1 … [Read more...]
