Honestly, the great thing about bread pudding is you can’t really “mess it up”. If you just throw in great tasting, quality ingredients and bake them, it really is a sure win. My family LOVES bread pudding. Who doesn’t? It’s such a great comfort food, it’s delicious and so sweet. So when I was sent a few loaves of amazing Little Northern Bakhouse gluten-free bread to make a great recipe for Mother’s Day, I decided to make a recipe that included apples. I mean, we live in Washington state, and yes, we absolutely love a great apple recipe.
My Bella loves cooking. LOVES it. She always wants to make new recipes and cook us breakfast and dinner. So, what better way to celebrate Mother’s Day than cooking together?
Cinnamon Apple Bread Pudding
- 5 slices of white bread, chopped
- 2 apples, chopped
- 2 cups of milk
- 1 cup of brown sugar
- 2 T chia seed meal
- 2 T cinnamon
- 1 t vanilla
Sugary Cinnamon Glaze
- 1 cup plant based milk
- 2 cups of powdered sugar
- 1 T cinnamon
Cinnamon Apple Bread Pudding Directions
Honestly you can’t go wrong with the above ingredients. This is one of these easy, dump it all in, kind of recipes. It’s a perfect morning recipe to make with my Princess. She loves cooking, and she did almost all of it. Of course, she likes when mom cleans up her mess. So I did.
First, chop up all the bread and apples and mix those together in a baking dish. Then, mix the rest of the ingredients into your plant based milk of choice, in a separate pourable container.
Pour your wet mixture over the bread and apples and let that sit for 10-15 minutes. My Bella was impatient, so she put our dish in the oven after 10 minutes.
Finally, bake the dish in a 350 degree oven for 40 minutes. I actually stirred it up half way through to get it all properly coated in lovely sweet juices again.
Bella made a sweet drizzle for the top of the apple bread pudding when it was done. That extra bit of sweetness really did the trick. She also wanted whipping cream on top — but it was sweet enough.
