Pesto Potato Salad Recipe

It is that time of year to enjoy potato salad. We have dusted off our outdoor table and we can’t wait for a warm evening to eat outdoors. In Washington, when we are off of work, we like to take advantage of summer weather. I am big sucker for potatoes and potato salad. So when I saw a recipe from Filippo Berio Extra Virgin Olive Oil this week for Pesto Potato Salad, I could not resist making it.

Only 7 simple ingredients and so yummy, Pesto Potato Salad is sure to please your family this summer. {I am convinced that pesto on anything would taste great!}

This would be a great idea for Father’s Day this weekend or any meal for your family!

Pesto Potato Salad Recipe

A fun twist on regular potato salad. Add pesto and olive oil for a great flavor.
Ingredients
  • 6-7 Medium Red Potatoes
  • ¼ C Pesto
  • 2 T Mayonnaise
  • 2 T Extra Virgin Olive Oil
  • ¼ C Red Onions, diced
  • Salt, to taste
  • Pepper, to taste
Instructions
  1. Boil red potatoes with skins on until tender. Cool and cut into ½ inch chunks. You can leave skins on or off, it is your choice. In a large bowl whisk pesto, mayo, olive oil, salt and pepper. Add onions and diced potatoes and toss.

Everyone in the family loved this new twist on potato salad.

    I love pesto but have never used it for potato salad. I’ll definitely have to try this!

      This was my first time on potatoes too. I love it on a lot of food items like pasta, pizza, and sandwiches though.

    I love pesto (and have a TON of basil growing in the back yard) but I would have never thought to try it in potato salad. This looks so good, I might just try and make it tomorrow!

    So, I BBQ’ed Ribs, Steak, Chicken and Sausage for Mother’s Day and made this Potato Salad after finding it on Pinterest. I love my traditional salad, so doing this for the family was a little different but guess what: It was a HIT! I am a big fan of Pesto and never thought to put it in Potato Salad. It was great and will definitely go with me to some of our tailgates this fall. YUM!!!

      That is awesome! It is fun to mix it up a bit. I like traditional potato salad too, but once and awhile it is nice to have a variety! So glad you liked it.
