It is the season for Swiss Chard. Our local farmers in our county are providing us with great big organic chard, with a beautiful flavor, and full firm green leaves. Have you had the chance to eat some local organic produce this summer? If not, I encourage you to head to your local Farmer's Market and stock up on fresh seasonal produce. It is so worth it. Here is how we made our Swiss Chard: I chopped the stems like a celery stalk and sauteed them with red onions, garlic, … [Read more...]
Blackberry Cobbler
Sort of.We have heard it called Boy Scout cobbler too. All we know is it is good! This time of year we pick our favorite summertime weed - blackberries. They grow so well here in Western Washington. And despite a few pokes and scrapes they are relatively simple to pick.We have made it three times in the last two weeks. Here is the recipe:4-6 cups of wild blackberries1 box organic yellow cake mix (we tried to use the organic version from our local health food store, and it did not turn out)1 … [Read more...]
Perfect Potato Salad Recipe
We have the honor of hosting my mother-in-law this week at our new home. This is the perfect week to visit us too. We just bought fresh Sockeye Salmon this morning. The fishermen brought it down from Canada and we got a deal - $12 for the entire salmon. Organic Strawberry Freezer Jam
Isn't it pretty? I am just so excited. I made my first batch of Organic Strawberry Freezer Jam. I have been talking about making it for weeks, and today I just decided that yes, I will do it. But, I only used half for this amount … [Read more...]

Orzo is a rice shaped pasta and very easy to cook up when company is coming. Don't you just love the internet? I can just search "vegetarian orzo recipes" and get so many different recipes right at my … [Read more...]
Don’t Leave Me
My parents have been visiting the Princess almost every evening. They play and run for an hour which is lovely because she has been sleeping REALLY well. It is so cute though. When it is time for them to leave, the Princess runs to the front door, extends her arms and says no. She tries to block their way out because she doesn't want them to go home. We all laugh. The funny thing is, she figured that out on her own. Suffice it to say, grandma and grandpa (who she now calls nana and papa because … [Read more...]
Step Aside Martha Stewart
Well, today while I was making lunch for Prince Charming, my Princess was having a tantrum. Which is not unusual for this time. She is getting sleepy and my attention is not focused on her. Two things that are not in her favor to act like a good little girl. So, I did something new. I pulled up a chair, put her on it, and asked her to help mommy. Duh? Why didn't I think of it sooner? So my Princess helped put "burger", "cheese", and corn tortillas in the casserole dish. We made Enchilada Bake … [Read more...]
