I planned a fun menu for our Seattle Seahawks NFL Thursday night game day opener a couple weeks ago. I decided to have vegetarian chili, macaroni and cheese, corn bread & vegetarian hot dog muffins and chips and cheese dip. Not just game day approved but also a kid approved menu plan as well. Both of my kids love macaroni and cheese and hot dogs so this was a fun menu plan for them.
I was trying to make our menu a little bit more sophisticated by using a healthy homemade kidney bean and TVP chili, homemade macaroni and cheese using Havarti cheese, and then a twist on corn dogs by making corn muffins with sliced hotdogs in the batter. Havarti cheese made a common staple in our home just a bit more fun. By mixing it up a bit this simple menu and it was a hit.

Macaroni and Havarti Cheese Recipe
Ingredients
2 cups uncooked elbow macaroni
4 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
2 cups milk
2 cups shredded Arla Dofino Havarti cheese (8 oz)
1 tablespoon chopped fresh dill weed (optional)
Directions:
Cook noodles according to package instructions. Set aside when done. Melt butter over medium heat in a saucepan, add flour and whisk together. Add milk and salt, whisking together until boiling. Remove from heat and stir in cheese until melted. Add cooked noodles and mix all together. Serves four.
My husband ate his macaroni and Havarti cheese underneath his vegetarian chili and LOVED it. I decided I wanted some fresh dill on top of my serving and I am so glad I did. Dill tastes wonderful with this cheese. {In fact, you can purchase Havarti Dill cheese from Arla Dofino as well.} I love this softer cheese with a mild flavor. It is one of my favorite cheese. The fresh dill complemented it so well, I am going to buy the Havarti Dill next time I am at the store.

This recipe/post really caught my eye for a number of reasons:
FIrst the photo ~ irresistible to a life long macaroni & cheese addict ~ who REALLY loves all varieties of cheese.
Second, I notice the date you posted it ~ September 15, 2014 ~ our 24 year anniversary!
And finally ~ you’re mentioning the Seattle Seahawks and we are still reeling from the final minute of the big game: the exhileration after that miraculous ball juggling catch ~ only to be followed by a deep despair after incomprehensible call that led to the interception that lost the game when there would have been like 30 seconds, 2 downs and a time out left in which to score a heroic come from behind win.. Heartbreaking….
But I digress, back to the mac & cheese. We happen to adore HAVARI Cheese ~ and I’ve made some 4-5 cheese pasta ~ but I hadn’t thought of Havarti and it looks so good have to try it soon ~ and because there are so many fellow mac & cheese lovers out there ~ I’m going to pin it as well. Thanks!
