We celebrated my mom’s birthday and my son’s birthday less than two weeks ago. Our party (which you’ll all hear about soon in a blog post) was actually on Sunday, June 1st. But, to celebrate both birthdays at church, I made Blue Velvet Cupcakes for our church potluck. {And yes, they were a BIG hit!}
The Duncan Hines Blue Velvet Cake Mix is so easy to make and so pretty! You just need 3 large eggs, 2/3 cup of water, and 8 T of softened butter. The consistency is much different than other cake mix I’ve used but it spooned into my cupcake pan easily and baked well.
We used a cute cupcake decorating kit that was left over after Easter and I made what I like to call Flower Power Blue Velvet Cupcakes. My daughter had so much fun helping put each individual flower candy on top of the frosting. She also helped add green food coloring to the frosting. We thought a light green frosting would be fun with the color scheme.
When we brought the cupcakes out after lunch at church, there were plenty of compliments about the fun blue color. We sang to my mom and Little Man both separately. His cupcake had a Tow Mater candy from the Disney movie Cars on top instead of candy flowers and flower pick. He also had two white candles in his, which we lit.
He didn’t like the lit candles. At all. He quickly started to cry. So I took his cupcake from him and gave him his own Flower Power Blue Velvet cupcake which he gobbled down quickly. In fact, he had two cupcakes. All 24 cupcakes went fast and then the kids asked when I was bringing more for church potluck. The cake is nice and moist and quite tasty. I really like the texture of a velvet cake mix.
Little do the kids at church know that I also have a Pink Velvet Cake Mix which I will be making this weekend for church. I think I will be topping this one with lemon frosting!
