A quick, healthy vegetarian salad made with Sucess® Rice. #spon
Ingredients
1 Cup Success® Rice
1 Can 15oz Black Beans, rinsed and drained
1 Cup Frozen Corn Kernals, thawed
⅓ Cup green onions, chopped
¼ Cup Cilantro, chopped
1 T Jalapeno Peppers, minced
2 Limes
Salt to taste
Pepper to taste
Instructions
Cook brown rice according to package instructions. Mix beans, corn, green onions, cilantro, and jalepeno peppers with still warm brown rice. Add juice of 1 lime, salt and pepper. Serve with lime wedges.
Serves 4 heaping 1 cup servings.
