I visited my local farm today. In Western Washington we have a lot of great family farms. I am blessed because the one in my small town is also organic. I was able to pick up Strawberries, Raspberries, Bell Peppers, Tomatoes, and Basil today. My kids ate up the berries pretty quickly today – I’m gonna have to stop and get more!

With the over-abundance of summer fruit and vegetables available, I thought I’d round up some great recipes to try. I am in love with Foodie.com right now. Here are two recipes that are pretty popular at my house:

Use up those awesome summer tomatoes in a Skinny Pesto Pasta. I dice ’em up small and made this for my six year old yesterday. I used fresh basil, organic fresh tomatoes and Angel Hair pasta. She LOVED it.

Another favorite in our house is Tex-Mex Brown Rice Salad:

Use that summer corn and make this very tasty, vegan salad. The entire family loves this. But we do love black beans and rice quite a bit…

    These recipes all look amazing! My local farmers have had the most amazing fruits and veggies this summer. I’ll have to try some of these.

    Anything with strawberries is our favorite, although tomatoes are a close second.

    I want to try the Zucchini Salad with Chickpeas. I like a fresh fruit salad that changes with what’s available.

    The vegan salad looks delicious! My sister is vegan and I never know what to cook when she visits. I’ll give this a try when she’s in town.

    I like to make cobblers with the fresh fruit: peaches, strawberries, blueberries; what ever is in season.

    Your Tex Mex salad looks great and healthy! I would use brown rice for it and add some other veggies to it.

    (Summer Fruit and Vegetable Recipes) I like having a nice and cold orange fluff salad during the summer months. I think they taste nice and refreshing.
