A fun twist on regular potato salad. Add pesto and olive oil for a great flavor.
Ingredients
6-7 Medium Red Potatoes
¼ C Pesto
2 T Mayonnaise
2 T Extra Virgin Olive Oil
¼ C Red Onions, diced
Salt, to taste
Pepper, to taste
Instructions
Boil red potatoes with skins on until tender. Cool and cut into ½ inch chunks. You can leave skins on or off, it is your choice. In a large bowl whisk pesto, mayo, olive oil, salt and pepper. Add onions and diced potatoes and toss.
